Celiac disease
Description
Characterized by poor food absorption and intolerance of gluten — a protein found in grains, such as wheat, rye, oats, and barley
Usually becomes apparent between ages 6 and 18 months
Pathophysiology
The amount and activity of enzymes in the intestinal mucosal cells is decreased.
Villi of the proximal small intestine atrophy, decreasing intestinal absorption.
Causes
Gluten intolerance
Immunoglobulin A deficiency
Assessment findings
Steatorrhea (fatty stools)
Chronic diarrhea
Anorexia
